Chunky Monkey Waffles

I love Ben and Jerry’s chunky monkey ice cream flavor.  It’s a delicious banana ice cream, with fudge chunks and walnuts thrown in for good measure.  Imagine my glee when I saw that Our Best Bites, a fun and informative food blog, had posted a recipe for Chunky Monkey Pancakes.  I was thrilled, but because I’m the only pancake eater in my family, I decided to adapt that same concept for waffles so I could share.  So, let me introduce Chunky Monkey Waffles (aka. Banana Waffles with chocolate chips and toasted nuts).  They are flavorful, fluffy, and served with buttermilk caramel sauce, pure decadence.

Chunky Monkey Waffles

  • 2 eggs, separated
  • ½ cup buttermilk
  • ½ cup mashed bananas
  • 5 tbs butter, melted
  • ¼ tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 1 tsp pumpkin pie spice
  • 2 tbs sugar
  • ½ cup chocolate chips
  1. In a large bowl whisk together the egg yolks, buttermilk, mashed bananas, melted butter, and vanilla.
  2. In another bowl, sift together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Fold the dry ingredients into the egg yolk mixture. Fold in the chocolate chips.
  4. In a new bowl, whisk the egg whites until soft peaks form. Fold the egg whites into the batter, ½ of it at a time.
  5. Cook the waffles according to your waffle manufacturer’s instructions.
  6. Serve with buttermilk caramel sauce (recipe below) and sliced bananas. Enjoy!

Buttermilk Caramel Sauce

  • ¾ cup buttermilk
  • 1 ½ cups sugar
  • ½ cup butter
  • 2 Tbsp corn syrup
  • 1 tsp baking soda
  • 1 tsp vanilla
  1. In a large pot (large!!! i’ve had it boil over many times haha) combine all the ingredients.
  2. Boil until golden brown.
  3. Eat on everything.
